The crawfish boil (4/1/06)
#21

Fuck that looks good. Why no new potatos or corn on the cob in there?

Do you know the recipe for the boil that you use? I've done a few crawfish boils, but never have been in charge of seasoning the pot.

How the fuck do you eat them??? Just crack the shell and mow down??

Just wondering if there is a special technique or anything.

We did potatoes, corn, carrots, minisausage, mushrooms, and garlic... you do those first before you do the crawfish.

I use zatarans pro boil plus some cayenne pepper.. you add more as you go so each subsequent batch is spicyer...

Fuck I'm hungry.

Well, the reason I was asking about the vegetables is because they aren't in the picture with the crawdads. Don't you usually dump them all out on the same table?

Well what we do is put them in a boiling bag and boil them first. Once they are done you put them in a cheap styrofoam icechest and just let people grab them from the ice chest.. the styrofoam keeps them warm longer..

nothing sucks more than cold crawfish and vegetables...

Next time you do it.. pick up one of those $4 icechests and put your stuff in there.. when you want a potatoe. it'll be piping hot and fresh.

Now that's a good idea. You're right about the cold food. None of that stuff is any good cold.

But the crawdads only take about 3 or 4 minutes to boil don't they?

Yes..

you put them in their own ice chest too.. but don't close it fully because the heat will continue to cook them until they become tough to peel..

now the potatoes and corn etc etc etc.. it dosen't matter if they continue to cook b/c you want them soft anyway..

Never throw your crawfish and vegetables in the same boiling pot or ice chest..

8, I've never had crawfish but I love shrimp and lobster so I just threw three little crawfish pies into the oven that I got from cajungrocer.com.

Question: do I use the Remoulade dressing with them?

Whoa! We boil the vegetables in the pot first and then the crawfish in the same pot after. You don't do that?

Yeah, dumbfuck. But, I think that he might have meant don't throw them in the same pot AT THE SAME TIME. I have never heard of not cooking in the same pot. Would you mind fucking yourself now, thanks.

Okay the crawfish pies (bitesize) are warmed up and eaten. They were good, 8. With just a little hint of spicyness. Yum. I guess I like crawfish.

Crawfish are a poor man's food. Like brisket or blackeyed peas. To really enjoy them and understand why people like them so much you would have to eat them in the environment that they are normally eaten. To really enjoy crawfish, you would have to be drinking beer and standing around a picnic table with about 50 pounds of freshly boiled crawdads, shucking them and sucking heads and having a party.

By the end of the night your thumbs are raw from breaking open the tails.
