2nd...clean fish, soak in water over night then cook fried, not baked.

only fish i eat is walleye and crappie. i'll eat catfish after we've eaten the supply of good fish already.

OH man.. I can help you out.

Take your filets and cut them into bite size pieces. Put some mustard on the..enough to cote the fish but don't be excessive. Add some Tony's seasoning for flavor. Get some Zataran's fish fry... the unseasoned one (because you used Tony's) and do each piece seperate... Fry between 6 to 10 pieces at a time.

Poof.. fried catfish.
