Chefs etouffee involves golden mushroom soup, roux and other stuff. Not really sure. He does it "creole" style.

i think its crab cakes anyway. Right now its just lump white crabmeat in a bowl. He usually hand makes his crab cakes. I'm also guessing fried catfish because its not breaded or anything yet.
