Who waits for summer?
I does BBQ no matter what. A month ago, I had to get the meat out of the grill and run to the basement because a tornado was hitting 7 miles to the north. Pesky tornadoes.

Vit E has never seen anyone BBQ a pickle before.

Mmmm dead pig.

Summer is coming - Ironcandle - 03-11-2005

I think you cooked it too fast.
Did you cook it in the ground or a drum?

Summer is coming - SizeMatters - 03-11-2005

I think he built a pit out of cinderblocks.

why do you say it was cooked too fast?

neither...pit cooked it over wood coals. The skin got alittle "well done" but it was really good. I admit I used too much wood. Was my first time roasting a pig.

I LOVE SUMMER

I THINK it was.
The color has too much contrast. Some of the areas are very dark and some are very light. It could be the picture. Cinder blocks are tough to use. Lots of uneven heat.

all I know is I would tear that fucking pig UP! I would have BBQ sauce in my ears!

I've done better since. nobody eats the skin anyway. your right about the uneven heat though. I find that if you line the bottom of the pit with brick and set the pig in the pit rather then on top of it, it'll cook more evenly.

Ahh, first time. Try this next time.
Dig a hole about 3' deep, get a roaring fire going (hickory, if possible) and let it burn down to embers. Lots of embers. Wrap your varmint in heavy duty foil and cook it in the ground. You will need to have enough embers to pour on top and cook it like an oven. That critter should cook all day long, whilst you drink the proper amount of beer. That evening, pull his ass out, and you won't believe how tender and tasty.

I'm not up to speed on redneck etiquite...are there rules in reference to fucking the pig?

Yeah, the cook goes first, then the host, it is a free-for-all after that. Sheesh, you Yankee-people have no upbringing whatsoever.

I'd love to do that, but I live on top of a mountain and I cann't dig more then 6" into the ground without hitting bedrock. What I do now that I've learned better: I have a 4x8 block pit, I dug out the bottom as much as I could and lined the bottom and sides with brick. (it's permanent) I put a chimney out the back about 2 courses up, and installed stainless steel rods 2 courses up.(to hold what I'm cooking.) I bought a steel lid for the thing so I can close it up, but it also doubles as a grill if I just want to cook a shit load of burgers or something. if I'm roasting a pig, I get up before dawn and burn about 1/2 cord of cherry down to coals, slap the pig in there, flip it once. and done before 4 in the afternoon.
