I went to a function for a customer in Lancaster and my booth's little prize was some $50 Amex cards and it turns out a lot of this guys customers were amish.I had to explain what american express was to about 10 of them.One guy signed his name with an X.

Man that had to suck. Jokes aside, are they even allowed to/willing to use something like an AmEx gift card? I don't know tons about the Amish, but wouldn't it fall under technology?
